Savory Bread Pudding Dressing

Ingredients

  • 1 cup chopped dried apricots

  • 1 cup orange liqueur

  • ½ cup butter

  • 1 cup chopped onion

  • 2 stalks celery, thinly sliced

  • 2 cloves garlic, minced

  • 1 tablespoon chopped fresh thyme

  • ½ teaspoon salt

  • 1 pound bulk spicy Italian sausage

  • 12 ounce Italian bread, cut into 1-inch cubes (8 cups)

  • 2 cup shredded Gouda cheese (8 ounces)

  • ½ cup slivered almonds, toasted

  • 4 large eggs

  • 2 large egg yolks

  • 2 cup whole milk

  • 1 cup heavy cream

  • ½ teaspoon black pepper

Directions

  1. In a small saucepan combine apricots and liqueur. Bring to boiling; immediately remove from heat. Cover and let stand at room temperature overnight. Drain apricots, reserving liqueur.

  2. Grease a 3-qt. baking dish. In a 10-inch skillet melt butter over low heat. Add onion and celery; cook on medium-high heat 5 minutes, stirring occasionally. Add garlic; cook 1 minute. Stir in thyme and salt. Transfer mixture to an extra-large bowl.

  3. In same skillet cook sausage over medium heat until browned; drain. Stir sausage into mixture in bowl. Stir in next three ingredients (through almonds) and apricots; toss well. Spoon mixture into prepared dish.

  4. In a medium bowl whisk together remaining ingredients (through pepper) and 2 Tbsp. of the reserved liqueur. Pour over mixture in dish. Cover and chill at least 4 hours or overnight.

  5. Preheat oven to 325°F. Bake 55 to 65 minutes or until puffed and golden and a thermometer registers 165°F. Let stand 15 minutes.
