Bring to boiling; immediately remove from heat. Cover and let stand at room temperature overnight. Drain apricots, reserving liqueur. Grease a 3-qt. baking dish. In a 10-inch skillet melt butter over low heat. Add onion and celery; cook on medium-high heat 5 minutes, stirring occasionally. Add garlic; cook 1 minute. Stir in thyme and salt. Transfer mixture to an extra-large bowl. In same skillet cook sausage over medium heat until browned; drain. Stir sausage into mixture in bowl. Stir in next three ingredients (through almonds) and apricots; toss well. Spoon mixture into prepared dish. In a medium bowl whisk together remaining ingredients (through pepper) and 2 Tbsp. of the reserved liqueur. Pour over mixture in dish. Cover and chill at least 4 hours or overnight. Preheat oven to 325°F. Bake 55 to 65 minutes or until puffed and golden and a thermometer registers 165°F. Let stand 15 minutes.
