Peel away dry outer skin from garlic head. leave skins of garlic cloves intact. Cut off the pointed top portion with a knife, leaving the bulb intact but exposing the individual cloves. Place garlic head, cut side up, in small baking dish; drizzle with olive oil. Bake in a 325 degree F oven, uncovered for 45 to 60 minutes or until cloves feel very soft when pressed. Cool slightly. Press to remove garlic paste from individual cloves. Mash garlic with tines of a fork. Stir together garlic paste and mayonnaise or salad dressing. Thin mixture with a little milk, if necessary. Store in refrigerator up to 24 hours. Makes about 1/2 cup mayonnaise.
