Rich Brown Sauce
- In small saucepan cook onion and carrot in butter or margarine over medium heat until tender. Stir in sugar. Cook and stir 5 minutes. Stir in flour. Cook and stir 6 to 8 minutes more or until flour is brown. Stir in beef broth, tomato paste, dried thyme, bay leaf, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until reduced to 1 1/2 cups. Strain. Makes about 1 cup.
