Red Onion Marmalade
- In a 4-quart Dutch oven or kettle combine all ingredients. Cook over medium heat to boiling. Reduce heat. Simmer, uncovered, for 30 to 40 minutes or until mixture is very thick and onions are very tender. Transfer to a bowl. Cover and store in the refrigerator for up to 4 weeks. Makes about 2 cups.

Fill the glass jar with marmalade. Cut a circle of decorative paper approximately 2 inches larger than the jar circumference. Cut the circle into a coil. Wrap around the jar. Tie generous lengths of curling ribbon around the jar handles. Curl the ends with scissors.
For the tag, cut a small rectangle from paper. Use pinking shears to cut a frame shape smaller than rectangle from decorative paper. Glue to rectangle. Let dry. Repeat with another color. Let dry. Punch a hole in one corner. Thread curling ribbon through hole.
