Directions

  1. Seed and finely chop cucumber (you should have about 2-3/4 cups). Combine with onion, carrot, lemon juice or vinegar, sugar, and horseradish in a glass or stainless steel mixing bowl.
  2. Cover and chill for 2 to 24 hours, stirring occasionally. Makes 3-1/4 cups (fifty-two 1-tablespoon servings).
