Cut 1/4- to 1/2-inch from the pointed end of each strawberry; set pointed pieces aside for hats. Place remaining berries stemmed-sides down. Using a paring knife, carefully remove some of the berry flesh from the tops of the berries. In a small bowl combine cream cheese and butter. Beat with a mixer until fluffy. Add vanilla. Gradually add powdered sugar and salt and beat until smooth. Transfer frosting to a piping bag fitted with a large open star tip. Carefully pipe frosting into the strawberry pieces, giving each a slight twist as you pipe. Top with the pointed strawberry pieces, cut sides down. Decorate as desired*. Serve immediately or chill up to 2 hours. * Use mini chocolate chips or black nonpareils for his eyes and mini chocolate chips for boots.
