Zucchini-Carrot Burgers

Veggie burgers need not be boring. Season shredded zucchini, carrots, and crushed crackers with green onions and top with a creamy garlic yogurt sauce to create this Mediterranean-inspired vegetarian burger idea.

Ingredients

  • ¼ cup refrigerated or frozen egg product, thawed, or 1 egg

  • 1 tablespoon olive oil

  • 1 teaspoon dried oregano, crushed

  • 22 stone-ground wheat crackers, crushed (1 cup)

  • 1 cup finely shredded zucchini (1 medium)

  • 1 cup finely shredded carrots (2 medium)

  • ¼ cup chopped green onions (2)

  • ½ cup plain low-fat yogurt

  • 1 clove garlic, minced

  • ½ teaspoon finely shredded lemon peel

  • 2 whole wheat pita bread rounds, halved

  • 1 cup shredded leaf lettuce

  • 1 small tomato, thinly sliced

  • ½ of a small cucumber, thinly sliced

Directions

  1. In a medium bowl combine egg product, 1 teaspoon of the oil, and the oregano. Add the crushed crackers, zucchini, carrots, and green onions to egg mixture; mix well. Shape the vegetable mixture into four 3 1/2-inch patties.

  2. In a large nonstick skillet heat the remaining 2 teaspoons oil over medium heat. Cook the patties in hot oil for 5 to 7 minutes or until golden brown, turning once. Meanwhile, for sauce, in a small bowl combine the yogurt, garlic, and lemon peel.

  3. Serve patties in pita bread halves with the lettuce, tomato, cucumber, and sauce.
