Salted Pecan and Orange Scones

A bit of orange zest in the batter and a fresh orange juice glaze gives these scones plenty of citrus "a-peel."

Salted Pecan and Orange Scones

Directions

  1. Preheat oven to 400 degrees F. In a large bowl combine the flour, sugar, baking powder, and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center of flour mixture; set aside.
  2. In a medium bowl combine egg, 3/4 cup whipping cream, and 2 teaspoons orange peel. Add egg mixture all at once to flour mixture. Add pecans. Using a fork, stir just until moistened.
  3. Turn dough out onto a lightly floured surface. Knead dough by folding and gently pressing it for 10 to 12 strokes or until dough is nearly smooth. Pat dough into a 10x4-inch rectangle. Cut in half lengthwise and in sixths crosswise to make 12 rectangles.
  4. Place rectangles 2 inches apart on a parchment paper-lined baking sheet. Brush wedges with additional whipping cream. Bake 13 to 15 minutes or until golden brown. Remove scones from baking sheet. Cool slightly. Drizzle or brush with orange glaze. If desired, sprinkle with orange peel strips. Serve warm.

Roasted and Salted Pecans

You can purchase these in the bulk section of some grocery stores. If you can't find them, toss 1 cup raw pecan halves with 2 teaspoons olive oil and 1/2 teaspoon salt. Spread in a shallow baking pan and bake in a 350 degrees F oven for 5 to 8 minutes or until toasted, stirring once. Cool.

Orange Glaze

In a small bowl stir together 1/2 cup powdered sugar, 1/4 teaspoon finely shredded orange peel, and 1 tablespoon orange juice.
