Stack tortillas and wrap in foil. Bake in a 350 degree F oven about 10 minutes or until heated through. (Or, stack tortillas and wrap in microwave-safe paper towels. Microwave on 100 percent power [high] about 30 seconds.)
Meanwhile, in a small saucepan combine the broth, green chile peppers, turmeric, and black pepper. Bring to boiling. Remove from heat; stir in couscous and green onion. Let stand, covered, for 5 minutes. Fluff couscous mixture with a fork. Stir in tomato and sweet pepper.
To assemble each burrito, spoon about 1/3 cup of the couscous mixture onto a tortilla just below center. Top with 2 tablespoons of the cheese; roll up tortilla. If desired, serve the burritos with salsa. Makes 2 servings.
