Salmon Loaf with Asparagus
Preheat oven to 350 degrees F. Rinse salmon; pat dry. Cut into pieces. In a food processor combine bread, carrot, green onions, egg, 1 Tbsp. of the cilantro, the curry powder, and 1/8 tsp. of the garlic salt. Cover and process until onions are finely chopped. Add salmon. Cover and pulse just until combined.
In a 3-qt. rectangular baking dish lightly pat salmon mixture into an oval loaf 1 1/2 inches thick. Bake 35 minutes.
Meanwhile, in a large bowl drizzle asparagus with oil and sprinkle with remaining 1 Tbsp. cilantro and 1/8 tsp. garlic salt; toss to coat. Brush salmon loaf with chili sauce and arrange asparagus around loaf. Bake 5 to 10 minutes more or until loaf registers 160 degrees F and asparagus is crisp-tender. Cover loaf and let stand 5 to 10 minutes.
Slice salmon loaf and serve with asparagus and lemon wedges.
