Heat 2 Tbsp. oil in a 12-inch skillet over medium heat. Add sweet pepper, celery, and onion. Cook and stir 5 to 6 minutes or until tender. Stir in stuffing; spread evenly. Cook 5 minutes; stir and spread evenly. Cook 3 to 4 minutes or until heated and browned. Stir in salmon; heat. Remove; cover and keep warm.
Wipe out skillet. Heat remaining oil over medium heat. Add eggs; cook 4 minutes or until done. Serve over hash with herb and, if desired, gravy.
