A lemon-dill vinaigrette and colorful vegetables impart a garden freshness to a simple can of white beans.
In a medium mixing bowl stir together lemon juice, oil, sugar, dill, black pepper, and garlic.
Add beans, sweet pepper, cucumber, and green onions. Toss to coat. Cover and refrigerate for 2 hours. Makes 6 side-dish servings.
Prepare as above. Cover and refrigerate for up to 24 hours.
