Watermelon and Baby Greens Salad
- Place onion in a shallow baking dish; add lime juice. Cover and chill for 6 to 24 hours.
- In a very large bowl toss together onions with lime juice, watercress, and watermelon. To serve, arrange watermelon mixture on a large serving platter. Top with feta and pine nuts. Drizzle dressing over salad. Makes 10 to 12 servings.
