Warm Melon with Herbed Ginger Glaze
- Cut each melon half into quarters. Score the melon by making shallow diagonal cuts across the surface using a sharp knife; set aside.
- For glaze, combine peach preserves, crystallized ginger, lemon peel, lemon juice, and cloves in a small saucepan. Heat over low heat until preserves are melted. Reserve 1 tablespoon of the mixture. Brush remaining glaze over scored melon pieces.
- Grill melon pieces, flesh side down, on the rack of an uncovered grill directly over medium coals for 4 to 6 minutes or until heated through. Brush with reserved glaze. Makes 4 side-dish servings.
