Directions

  1. Rinse pea pods under water until thawed. Drain. Cut pea pods in half crosswise. In a salad bowl place spinach, pea pods, and pimiento.
  2. For the dressing, in a jar combine salad oil, vinegar, soy sauce, and honey. Cover and shake well. Add almonds to salad. Pour dressing over spinach mixture; toss and serve immediately. Makes 4 side-dish servings.
