For dressing, in a small bowl stir together the mayonnaise dressing, pineapple juice, the 1 tablespoon honey mustard, and the ginger. Cover and chill until ready to serve.
Trim any fat from meat. Place meat on a rack in a shallow roasting pan. Roast in a 425 degree F oven for 20 minutes.
Spoon the 2 tablespoons honey mustard over meat. Roast for 5 to 10 minutes more or until juices run clear (160 degree F).
To serve, divide spinach, sliced fruit, and grapes among four dinner plates. Cut the meat into thin slices. Arrange meat slices on top of spinach mixture. Stir the dressing; drizzle over salads. If desired, sprinkle with black pepper. Maks 4 servings.
