In a large mixing bowl toss 2 cups of the peaches or nectarines with 1 tablespoon lemon juice; set aside.
In a medium saucepan combine remaining sliced peaches or nectarines, water, and 1 tablespoon lemon juice. Bring to boiling; reduce heat. Cover and simmer about 5 minutes or until very tender. Do not drain. Cool the mixture slightly.
In a blender container or food processor bowl place slightly cooled mixture. Cover and blend or process until mixture is smooth. Return to saucepan.
In a small mixing bowl combine sugar, cornstarch, cinnamon, and cloves. Add to pureed peach mixture in the saucepan. Cook and stir until mixture is thickened and bubbly; cook and stir for 2 minutes more. Cool.
Combine the reserved peaches or nectarines, plums, and grapes. Spoon peach sauce over all. Toss gently to coat. Cover and chill for at least 2 hours or up to 4 hours.
At serving time, add blueberries and banana; toss to mix. Serve immediately. Makes 8 servings.
