Directions

  1. Cook noodles according to package directions; drain. Rinse with cold water until cool; drain.
  2. If using fresh asparagus, cook in a covered saucepan in a small amount of lightly salted boiling water for 4 to 6 minutes or until crisp-tender. (Or, if using frozen asparagus, cook according to package directions.) Drain well.
  3. In a large bowl, combine noodles, asparagus, carrots, and pork. Divide into 4 individual containers. Cover and chill overnight.
  4. In a screw-top jar, combine reduced-sodium soy sauce, rice vinegar or vinegar, honey, cooking oil, and toasted sesame oil. Cover and shake well to mix. Divide among 4 small covered containers. Chill overnight.

In an insulated container with ice packs, pack noodle mixture, vinaigrette and toppers separately. To serve; shake dressing and toss with noodle mixture.
