Directions

  1. Place potatoes in a saucepan; add water to cover. Bring to boiling; reduce heat. Cover and simmer for 20 to 25 minutes or just until tender; drain well. Cool potatoes slightly. Halve, peel, and cut potatoes into 1/4-inch-thick slices.
  2. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove bacon, reserving 3 tablespoons drippings in skillet. Drain bacon on paper towels. Crumble the bacon and set aside.
  3. In same skillet, cook onion in reserved drippings over medium heat for 5 minutes. Stir in sugar, mustard, flour, salt, and pepper; add water and vinegar. Cook and stir until slightly thickened and bubbly. Stir in potatoes, bacon, and celery. Cook, stirring gently, for 1 to 2 minutes more or until heated through. Serve warm. Makes 10 to 12 side-dish servings.
