Directions

  1. Remove zest and juice from lemon, set aside. In a bowl combine beef tenderloin, grilled and sliced; arugula; fennel, thinly shaved; asparagus, trimmed, grilled, and slightly chilled; grape tomatoes, halved; red onion, sliced, grilled, and slightly chilled; low-fat feta cheese, crumbled; lemon juice; olive oil; salt; and pepper. Top with lemon zest and chives, chopped.
