Directions

  1. For dressing, combine mayonnaise or salad dressing, yogurt, dill, milk, lemon-pepper seasoning, and garlic powder in a small mixing bowl. Set aside.
  2. Combine mesclun, mushrooms, yellow summer squash, and pea pods in a large mixing bowl. Toss lightly to mix. Divide salad among four salad plates.
  3. Using a vegetable peeler, cut zucchini lengthwise into thin strips; arrange strips on salads. Serve with dressing. Garnish with fresh dill, if desired. Makes 4 side-dish servings.
