Ginger Fruit Slaw
- Drain pineapple, reserving 1/4 cup of the juice; set aside.
- In a large bowl, combine cabbage, carrots, orange sections, dried apricots (if desired), and pineapple. Cover and chill in the refrigerator for at least 1 hour or up to 8 hours.
- For dressing, in a screw-top jar, combine reserved pineapple juice, honey, lemon juice, and ginger. Cover and shake well. Chill in the refrigerator for at least 1 hour or up to 8 hours.
- To serve, shake dressing. Pour over cabbage mixture, tossing to coat. Makes 8 to 10 side-dish servings,
