Directions

  1. Prepare Homemade Dijon Dressing. Cut or tear lettuce into pieces about the size of the tomatoes; toss lightly with some of the dressing. Set aside.
  2. In a large skillet heat olive oil over medium heat. Break eggs into skillet. Sprinkle eggs with salt and cracked black pepper. When whites are set, add water. Cover skillet and cook eggs for 3 to 4 minutes or until yolks begin to thicken but are not hard.
  3. While eggs are cooking, on individual serving plates stack lettuce, tomatoes, and herb. Top each serving with an egg. Top with salami and onions. Pass remaining dressing. Makes 4 servings.

  1. In a small screw-top jar with a tight-fitting lid combine extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and ground black pepper. Cover and shake to combine.
