Florida Shrimp and Fruit Platter
- For dressing, in a small bowl combine mayonnaise or salad dressing, orange peel, orange juice, ginger, and pepper. Cover and chill until serving time.
- Line a platter with lettuce leaves. Arrange shrimp, pineapple, grapefruit, and avocado on lettuce. Drizzle with dressing. Sprinkle with cashews or peanuts. Makes 4 servings.
