Directions

  1. In a 2-quart saucepan combine water, wheat berries, and salt. Bring to boiling; reduce heat. Cover and simmer for 40 minutes. Add rice. Cover; cook for 20 minutes more or until rice is tender. Drain off any excess liquid. Cool mixture.
  2. In a large bowl gently stir together the wheat berry-rice mixture, orange sections, and broccoli mix. Set aside.
  3. For dressing, in screw-top jar combine vinegar, salad oil, sugar, and crushed fennel seed. Pour the dressing over wheat berry mixture; toss gently to mix. Makes 6 servings.
