- Place zest and vinegar in a glass measure or microwave-safe glass bowl; microwave on 100 percent power (high) for 2 minutes. Let stand 10 minutes. Remove lemon zest. Pour vinegar into a clean bottle or jar. Add thin strip of peel and dried red chili pepper, if desired. Cover jar tightly with a nonmetal lid (or cover jar with plastic wrap and tightly seal with a metal lid). Store in a cool, dark place up to 6 months. Remove chili pepper after several days, if desired. Makes about 2 cups (32, 1 tablespoon servings).
