Directions

  1. For dressing, in a screw-top jar combine olive oil, balsamic vinegar, green onion, salt, and pepper. Shake well to combine.
  2. In a large salad bowl carefully toss together the watercress, cantaloupe wedges, and tomatoes. Sprinkle with goat cheese. Drizzle with dressing. Toss gently to coat. Makes 8 side-dish servings.
