Big Green Salad with Two-Pepper Dressing

Prepare the dressing ahead of time and then bring it back to room temperature before you toss the salad together.

Big Green Salad with Two-Pepper Dressing

  • 4 cup torn butterhead lettuce (2 medium heads)

  • 1 cup fresh mint sprigs

  • 1 cup fresh watercress sprigs

  • ¾ cup fresh cilantro sprigs

  • 1 cup daikon, peeled and cut into 1-inch strips

  • 1 Two-Pepper Dressing (see recipe below)

Two-Pepper Dressing

  • ½ cup finely chopped green sweet pepper

  • cup rice vinegar

  • 3 tablespoon salad oil

  • 1 fresh anaheim or jalapeno chile pepper, seeded and finely chopped

  • 1 clove garlic, minced

  • ½ teaspoon sugar

  • ¼ teaspoon salt

  • ¼ teaspoon freshly ground black pepper


  1. Rinse lettuce, mint, watercress, and cilantro in cold water; pat dry. In a large salad bowl combine rinsed greens and daikon. Slowly add Two-Pepper Dressing; toss to coat. Serve immediately. Makes 6 side-dish servings.

Two-Pepper Dressing

  1. In a screw-top jar combine green sweet pepper; rice vinegar; salad oil; chile pepper; garlic; sugar; salt; and black pepper. Cover and shake well. Refrigerate until ready to use.
