Directions

  1. Measure out 3/4 teaspoon of the seasoning packet (half of the packet); reserve the remaining for another use. In a medium bowl whisk together the 3/4 teaspoon seasoning, salad oil, rice vinegar, garlic, peanut sauce, and red pepper. Remove 2 tablespoons of the mixture; brush onto pork chops.
  2. Preheat broiler. Place pork on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 9 to 12 minutes or until meat juices run clear (160 degree F), turning chops once. Cool slightly. Thinly slice across the grain into bite-size strips.
  3. Meanwhile, cook noodles in a large saucepan in boiling water for 2 minutes drain. Transfer to a large bowl. Add the pork, cabbage, broccoli, almonds, green onion, and remaining oil mixture. Toss to coat. Cover and chill for 4 to 24 hours.
  4. To tote, spoon into 5 individual containers; pack each with an ice pick. Eat within 5 hours. Makes 5 servings.
