Preheat oven to 425°F. Line a baking sheet with parchment paper.
Cut potatoes in half lengthwise. In a bowl combine potatoes, oil, and salt; toss gently to coat. Press a sage leaf against the cut side of each potato half. Arrange potatoes, cut sides down, on the prepared baking sheet.
Bake 15 to 20 minutes or until potatoes are tender. Serve warm or at room temperature.
