Rudolph Delights

Directions

  1. Preheat oven to 350 degrees F. Lightly grease cookie sheets or line with parchment paper; set aside. In a small bowl combine flour, baking powder, and salt; set aside. In a large bowl combine eggs, granulated sugar, and vanilla. Whisk until combined; set aside.
  2. In a heavy medium saucepan heat the 10 oz. chocolate, the butter, and coffee powder over medium-low heat until melted and smooth, stirring occasionally. Remove saucepan from heat. Whisk melted chocolate mixture into the egg mixture until combined. Stir in the flour mixture just until combined. Stir in the 12 oz. chocolate (dough will have consistency of a thick brownie batter).
  3. Drop dough by heaping teaspoons 2 inches apart onto prepared cookie sheets. Place two pretzel twists at the top of each dough mound for antlers. Bake 8 to 9 minutes or until tops appear dry and centers remain soft. While cookies are still hot, place a red candy in center of each cookie for a nose. Cool on cookie sheets 3 minutes. Remove; cool on wire racks.

Layer cookies between sheets of waxed paper in an airtight container; cover. Store at room temperature for up to 3 days freeze for up to 3 months.
