  • Combine sugar, dry mustard, paprika, turmeric, and celery seed. Rub mixture onto ribs. Cover and refrigerate ribs for 6 to 24 hours. At least 1 hour before cooking, soak wood chips in enough water to cover. Drain chips. Makes enough for 3 pounds of meat or fish.
