  • In a large bowl beat banana, egg, and almond butter with a mixer on low until combined. Beat in bacon and cheese. Beat in rice flour. Cover and let stand 10 to 20 minutes. (Dough will get firmer as it stands.)

  • Preheat oven to 350°F. Line a baking sheet with parchment paper. On a surface lightly dusted with brown rice flour, roll dough until 1/4 inch thick. If desired, sprinkle lightly with additional bacon pieces and cheese; roll lightly to adhere. Using 2- to 3-inch cookie cutters, cut dough into desired shapes. Place cutouts on prepared baking sheet.

  • Bake 14 to 18 minutes or until firm and edges are light brown. Remove; cool on a wire rack.

To Store

Place biscuits in an airtight container. Store in refrigerator up to 1 week or freeze up to 3 months.
