Beat in bacon and cheese. Beat in rice flour. Cover and let stand 10 to 20 minutes. (Dough will get firmer as it stands.) Preheat oven to 350°F. Line a baking sheet with parchment paper. On a surface lightly dusted with brown rice flour, roll dough until 1/4 inch thick. If desired, sprinkle lightly with additional bacon pieces and cheese; roll lightly to adhere.
