- Lightly grease 30 to 36 1-3/4-inch muffin tins or a cookie sheet; set aside.
- Divide dough into 30 to 36 pieces. Shape into small balls. Place rolls in prepared muffin tins or on cookie sheet.
- Cover; let rise until nearly double in size (about 30 minutes). Beat together the egg white and water. Brush over the rolls. Sprinkle generously with desired seeds.
- Preheat oven to 350 degree F. Bake for 13 to 15 minutes or until golden brown. Transfer rolls to wire racks. Serve warm. Makes 30 to 36 mini rolls.
