Roasted Veggies

Directions

  1. Preheat oven to 350 degrees F. Line a 15x10x1-inch baking pan with foil. Coat foil with cooking spray; set pan aside.
  2. In a medium bowl toss together potatoes, carrots, red onion, and garlic. Remove half of the vegetables to make Herb-Roasted Vegetables. Spread the remaining vegetables in the prepared baking pan. Dot with butter and sprinkle with salt and pepper.
  3. Roast for 25 to 30 minutes or until vegetables are tender, stirring once. Transfer roasted vegetables to a serving dish. Sprinkle with cheese; toss gently to combine.
