Roasted Rosemary Delicata Squash

Directions

  1. Preheat oven to 425 degrees F. Line a 15x10x1-inch baking pan with foil; lightly coat with nonstick cooking spray. Set pan aside.
  2. Place squash and shallots in a large bowl. Drizzle with olive oil and sprinkle with rosemary, salt, and pepper; toss to coat. Arrange squash mixture in a single layer in the prepared baking pan.
  3. Roast about 30 minutes or until squash is tender and golden, turning once. Transfer squash to a serving bowl. Sprinkle with cheese and, if desired, walnuts.
