  • 1 pound new potatoes

  • 1 tablespoon olive oil

  • ½ teaspoon dried thyme, crushed

  • Salt

  • Black pepper

  • 1 pound fully cooked center-cut ham slice, cut 1-inch thick

  • cup orange marmalade


  1. Preheat oven to 400°F. In a shallow roasting pan combine potatoes, olive oil, thyme, and salt and pepper to taste. Roast for 15 minutes. Push potatoes to one end of pan. Add ham slice to pan and brush ham with orange marmalade. Roast for 15 minutes more or until potatoes are tender and ham is heated through.
