Ingredients

  • 1 1.5 pound head savoy, green, or red cabbage, trimmed and cut into 8 wedges

  • Olive oil

  • Salt and black pepper

  • 3 pears, halved lengthwise

  • 2 tablespoon fresh lemon juice

  • ¾ cup chopped walnuts, toasted

  • ½ cup crumbled blue cheese (2 oz.)

Directions

  1. Preheat oven to 425ºF. Place cabbage in a shallow baking pan. Drizzle with oil and sprinkle with salt and pepper.

  2. Roast 35 to 40 minutes or until tender, turning cabbage once and adding pears the last 10 to 15 minutes of roasting.

  3. Drizzle lemon juice over cabbage mixture and sprinkle with walnuts and cheese.
