You can stop looking for beef, the broccoli is the steak in this vegetarian recipe. Serve it up as an impressive side dish at your next dinner party, or make it for a light meal after a day of indulgence.
Preheat oven to 450 degrees F. Line a baking sheet with foil. Remove 1 tsp. zest and squeeze 1/3 cup juice from one of the oranges; cut remaining orange into wedges.
For dressing, in a screw-top jar combine orange zest and juice, 2 Tbsp. of the oil, the garlic, and 1/4 tsp. of the salt. Cover and shake well .
Trim broccoli stems to 3 inches long. Cut broccoli heads lengthwise into 3/4-inch "steaks." Brush steaks with remaining 1 Tbsp. oil and sprinkle with remaining 1/2 tsp. salt. Arrange on prepared baking sheet. Roast 20 to 25 minutes or until tender and light brown, turning once. Drizzle with dressing.
If desired, serve broccoli steaks over orzo. Top with pine nuts, cheese, basil, and pepper. Serve with orange wedges.
