Directions

  1. Cook brown rice and salt according to package directions; cool slightly. In a large bowl combine cheese, sweet pepper, onion, nuts, and pimiento; stir in cooled rice.
  2. For dressing, stir together oil, vinegar, and black pepper; add to rice mixture. Toss gently to coat. Cover; chill for at least 4 hours or up to 24 hours. Makes 8 servings.
