Directions

  1. Preheat oven to 350 degree F. Hollow out apple halves with a spoon or melon baller, leaving a 1/2-inch shell and reserving 1/2 cup pulp. Arrange apple halves, cut side down, in a 2-quart rectangular baking dish. Bake, covered, for 10 minutes. Chop reserved apple pulp.
  2. Meanwhile, bring 3/4 cup water and butter to boiling. Stir in couscous, raisins, pecans, cinnamon, nutmeg, and chopped apple. Remove from heat. Cover and let stand 5 minutes.
  3. In a small saucepan combine the honey, 2 tablespoons water, and the cloves. Bring to boiling; boil gently for 1 minute. Set aside.
  4. Fluff couscous mixture with a fork. Turn apple halves over. Fill halves with couscous mixture. Drizzle with half the honey mixture. Cover loosely with foil and bake 15 minutes more or until apples are tender. Uncover; drizzle with remaining honey mixture just before serving. Makes 8 servings.
