Pineapple Ginger Chutney
- For chutney, in a medium saucepan combine undrained pineapple, onion, raisins, brown sugar, vinegar, gingerroot or ginger, cinnamon, and crushed red pepper (if using). Bring to boiling; reduce heat. Simmer, uncovered, about 30 minutes or until liquid is syrupy. Serve warm. Makes about 2 cups chutney.
