- Chop half of the mango slices; set aside. In medium saucepan stir together remaining mango slices, the currants or raisins, green onions, vinegar, brown sugar, mustard seed, and salt. Bring to boiling; reduce heat. Cover and simmer for 5 minutes. Remove from heat. Stir in chopped mango. Makes about 1-1/2 cups chutney.
