Line a baking sheet with foil. Place flour in a shallow dish. In a second shallow dish combine eggs and 1/3 cup ranch dressing. In a third shallow dish combine crushed crackers, ranch dressing mix, and, if desired, paprika. Coat chicken with flour; dip in egg mixture and coat with cracker mixture. In a 12-inch heavy skillet heat oil over medium. Add chicken, a few pieces at a time, and cook 8 to 10 minutes or until golden, turning occasionally. Transfer chicken to prepared baking sheet. Bake 30 minutes or until chicken is done (170°F for breasts; at least 175°F for thighs and drumsticks). If desired, cover and chill up to 24 hours. Serve with additional ranch dressing.
