Chocolate Buttermilk Loaves
- Grease the bottom and 1/2 inch up the sides of four 5-3/4x3x2-inch foil loaf pans; place each in a shallow baking pan and set aside. In a medium mixing bowl combine flour, cocoa powder, baking powder, baking soda, and salt; set aside.
- In a large mixing bowl beat the butter with an electric mixer on medium speed for 30 seconds. Add sugar and beat until fluffy. Beat in eggs until combined. Alternately add the flour mixture and buttermilk, beating just until combined after each addition. Stir in nuts. Spoon about 1/2 cup of the batter into each prepared pan. Sprinkle each pan with some of the chocolate pieces. Spoon on remaining batter.
- Bake in a 350 degree F oven for 30 to 35 minutes or until a wooden toothpick inserted near centers comes out clean. Cool in pans on wire racks for 10 minutes. Remove loaves from pans; cool completely on wire racks. Wrap tightly and store at room temperature for up to 3 days or in the freezer for up to 1 month. Makes 4 loaves.
