Directions

  1. In a Dutch oven combine beans, potatoes, tomatoes, broth, sausage, garlic, and crushed red pepper. Bring to boiling; reduce heat. Simmer, covered, for 25 to 30 minutes or until potatoes are tender.
  2. Before serving, stir in escarole. Sprinkle each serving with cheese.

Quick Chicken Minestrone:

Prepare as directed, except substitute two 6-ounce packages refrigerated cooked Italian-style chicken breast strips for the sausage, one 10-ounce package frozen cut green beans for the potatoes, and reduced-sodium chicken broth for the beef broth. Reduce cooking time to 15 minutes or until green beans are tender. Before serving, stir in 2 cups torn fresh spinach in place of the escarole.
