Quick and Easy Tomato Sauce
- Cut tomatoes in half crosswise. Using the coarse side of a box grater, carefully grate the cut sides of the tomatoes into a bowl until only skins remain. Discard the skins.
- In a large skillet cook onions and garlic in hot oil for about 2 minutes or until aromatic and softened. Add tomato puree and bring just to simmering; remove from heat. Stir in basil and season to taste with salt and pepper. Serve over hot cooked pasta.
