Pumpkin spice is back! Make your favorite drink into a mug muffin.
In a small bowl combine baking mix, 1/2 teaspoon pumpkin pie spice, brown sugar and espresso powder; mix well. Stir in milk, pumpkin, oil and vanilla; mix just until moistened.
Coat a microwave-safe mug (14 oz or larger with straight sides) with nonstick cooking spray. Pour batter into mug.
Microwave on high 2 to 2-1/2 minutes or until toothpick inserted in center comes out clean. Let cool 5 minutes. Top with whipped topping and sprinkle with additional pumpkin pie spice.
