Pumpkin-Nut Upside-Down Cake

Ingredients

  • ¼ cup butter

  • 1 cup almonds, pecans, and/or walnuts, coarsely chopped

  • ½ cup packed brown sugar

  • 3 tablespoon hazelnut liqueur

  • 1 ⅓ cup all-purpose flour

  • 1 ½ teaspoon pumpkin pie spice

  • 1 ¼ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup granulated sugar

  • ½ cup vegetable oil

  • 2 eggs

  • 1 cup canned pumpkin

Directions

  1. Preheat oven to 350°F. Place butter and nuts in a 9-inch square or round baking pan. Toast in oven for 5 minutes. Remove from oven. Stir in brown sugar and liqueur. Spread mixture evenly in pan. Chill 5 minutes.

  2. For cake, in a large bowl whisk together next five ingredients (through salt). In a medium bowl whisk together granulated sugar, oil, eggs, and pumpkin. Add to flour mixture, whisking until smooth. Spoon batter over nut mixture in pan, starting along the edges and working toward the center; spread evenly.

  3. Bake about 30 minutes or until a toothpick comes out clean. Cool in pan 5 minutes. Loosen sides of cake and invert onto a serving platter. Cool slightly before serving.
